\/>\n2 Tbsp oil<br \/>\n1 c. sugar<br \/>\n3 eggs<br \/>\n3 c. flour<br \/>\n1 1\/2 tsp. baking powder<br \/>\n1 tsp. vanilla<br \/>\n2 tsp. lemon juice<br \/>\n2 tsp cinnamon<br \/>\n1\/2 c. data-setdir=\"false\">bake at 350-degrees 45-60 minutes until browned<\/div>\n<div dir=\"ltr\" data-setdir=\"false\"><span style=\"font-family: arial,helvetica,sans-serif;\">remove loaves and slice immediately into about 1&#8243; slices\u00a0\u00a0<\/span><\/div>\n<div dir=\"ltr\" data-setdir=\"false\">once sliced, dip sides into a cinnamon\/sugar mixture (optional) and then\u00a0place cookies on cookie sheet with the sides facing upright.\u00a0 The goal now is to brown\/crisp each side. Watch carefully and bake just until the upright side is browned. Then turn each cookie over so the other side can be upright and place back in oven to brown\/crisp that side. Generously grease two\u00a0<span class=\"toggleunits\" data-alt=\"20\">8<\/span>\u00a0x\u00a0<span class=\"toggleunits\" data-alt=\"10-cm\">4-inch<\/span>\u00a0loaf pans with butter and dust with flour (alternatively, use a baking spray with flour in it, such as Pam with Flour or Baker&#8217;s Joy). In a medium bowl, combine the flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg. Whisk until well combined; set aside.\u00a0 In a large bowl of an electric mixer, beat the butter and sugar on medium speed until just blended. Add the eggs one at a time, beating well after each addition. Continue beating until very light and fluffy, a few minutes. Beat in the pumpkin. Make a nice indentation in top of each cookie, I use the end (the handle end) of a wooden spoon for this. Put a little bit of jelly or jam into each indentation.
