{"id":3234,"date":"2014-05-09T15:56:38","date_gmt":"2014-05-09T20:56:38","guid":{"rendered":"http:\/\/blog.thestationerystudio.com\/?p=3234"},"modified":"2014-05-09T15:56:38","modified_gmt":"2014-05-09T20:56:38","slug":"yummy-carrot-cake-cupcakes-with-cream-cheese-frosting","status":"publish","type":"post","link":"https:\/\/www.thestationerystudio.com\/blog\/yummy-carrot-cake-cupcakes-with-cream-cheese-frosting\/","title":{"rendered":"Yummy Carrot Cake Cupcakes with Cream Cheese Frosting"},"content":{"rendered":"<p>This week I made some delicious carrot cake cupcakes with cream cheese frosting for teacher appreciation week.\u00a0 It was the perfect chance for me to try out our new baking cups.\u00a0 And of course, I like to make almost anything that has cream cheese frosting on it!\u00a0 I used the following recipe and it turned out great!<\/p>\n<p><iframe loading=\"lazy\" src=\"\/\/www.youtube.com\/embed\/GokDyqKPDtg?rel=0\" height=\"315\" width=\"560\" allowfullscreen=\"\" frameborder=\"0\"><\/iframe><\/p>\n<div class=\"ERSSectionHead\"><span style=\"text-decoration: underline;\"><strong>For the cupcakes (makes 12):<\/strong><\/span><\/div>\n<ul>\n<li class=\"ingredient\" itemprop=\"ingredients\">1 cup flour<\/li>\n<li class=\"ingredient\" itemprop=\"ingredients\">\u00be cup sugar<\/li>\n<li class=\"ingredient\" itemprop=\"ingredients\">1 teaspoon cinnamon<\/li>\n<li class=\"ingredient\" itemprop=\"ingredients\">1 teaspoon baking soda<\/li>\n<li class=\"ingredient\" itemprop=\"ingredients\">\u00bd teaspoon baking powder<\/li>\n<li class=\"ingredient\" itemprop=\"ingredients\">\u00bc teaspoon salt<\/li>\n<li class=\"ingredient\" itemprop=\"ingredients\">1\u00bd cups grated carrots (heaping)<\/li>\n<li class=\"ingredient\" itemprop=\"ingredients\">\u2154 cup oil<\/li>\n<li class=\"ingredient\" itemprop=\"ingredients\">2 eggs, beaten<\/li>\n<\/ul>\n<div class=\"ERSSectionHead\"><span style=\"text-decoration: underline;\"><strong>For the frosting:<\/strong><\/span><\/div>\n<ul>\n<li class=\"ingredient\" itemprop=\"ingredients\">4 ounces cream cheese<\/li>\n<li class=\"ingredient\" itemprop=\"ingredients\">4 tablespoons butter<\/li>\n<li class=\"ingredient\" itemprop=\"ingredients\">2+ cups powdered sugar<\/li>\n<li class=\"ingredient\" itemprop=\"ingredients\">1 teaspoon vanilla<\/li>\n<\/ul>\n<div class=\"ERSInstructionsHeader ERSHeading\"><span style=\"text-decoration: underline;\"><strong>Directions:<\/strong><\/span><\/div>\n<ol>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Preheat the oven to 350 degrees. Combine the flour, sugar, cinnamon, baking soda, baking powder, and salt in a large bowl. In a separate bowl, combine the grated carrots and the oil. Slowly add the flour mixture, stirring until just mixed. Add the beaten eggs and stir a few times (like 15 or less around the bowl &#8211; the fewer the better)!<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">Scoop batter into baking cups about 1\/3 to 1\/2 of the way. Bake for 15 minutes, check how they&#8217;re doing, and add a few minutes if necessary. I find that the baking time varies greatly with oven, so just check for the right golden brown color and springy tops. Allow the cupcakes to cool.<\/li>\n<li class=\"instruction\" itemprop=\"recipeInstructions\">For the frosting, blend the cream cheese, butter, and vanilla until smooth. Slowly beat in the powdered sugar until smooth.
