The Barbecue Bible Personalized Leather Book by Steven RaichlenRECIPE NOTES
  • Yield: 3 to 4 servings
  • Method: Direct grilling

INGREDIENTS

For the chicken:

  • 2 to 3 chicken breasts, each cut into 1 ½-inch pieces
  • 1/4 cup of barbecue rub
  • 1/2 cup of barbecue sauce
  • Oil for the grill grate

For the veggies (pick your favorite):

  • 1 red onion, peeled and cut in quarters or sixths
  • 2 to 3 bell peppers cut into 1 ½- to 2-inch pieces
  • 1 cup small to medium cremini mushrooms
  • Extra virgin olive oil
  • 2 tablespoons barbecue rub

You’ll also need:

  • 2 to 3 hardwood chunks or 1 ½ cups wood chips, soaked and drained; flat metal skewers, instant-read meat thermometer; basting brush.

RECIPE STEPS

1: Set up your grill for direct grilling and heat to high. Brush or scrape the grill grate clean and oil it well. Add wood chunks or chips to the fire (or smoker box if using a gas grill).

2: Season the chicken pieces on all sides with the rub. (Optional: Lightly oil the chicken pieces to help the rub adhere to the chicken.)

3: Place all the veggies in a mixing bowl and drizzle with olive oil, then season with the barbecue rub.

4: Slide the chicken pieces and veggies onto the metal skewers. Place the chicken and veggies on separate skewers as they have different cooking times.

5: Grill the veggies 2 to 3 minutes a side for a total of 5 to 6 minutes. Grill the chicken on each side for 2 to 3 minutes. Baste the chicken with barbecue sauce and grill for an additional 1 to 2 minutes per side.

6: Remove the grilled veggies and chicken skewers from the grill. Use a grill glove to hold the skewer when removing the chicken and the veggies since the metal skewers will be hot. Optional: Sprinkle the chicken kebabs with additional barbecue rub, if desired.

7: Serve immediately.

Summer Fun Returns

Summer Entertaining

Summer fun is back!  To think that last year we were in quarantine and our plans were put on hold.  A year later and we are ready to make plans again from vacations to get-togethers to impromptu patio parties.  We have some great ideas and recipes sure to inspire some party ideas.

Cocktails on the Patio

Spend a beautiful summer evening on the patio with a few close friends.  You can serve cocktails and hors d’oeuvres while you chat under the stars (we found some great hors d’oeuvres recipes to get you started).  Set the tone with string lights, candles and music.  You can serve beverages in shatterproof drinkware to keep entertaining stress-free (here are some great cocktail recipes to try). For personalized napkins, cups, plates, trays, cutting boards and more, shop our Summer Entertaining Supplies boutique.

Ice Cream Social

There’s nothing like a good old-fashioned ice cream social. You can easily put one together for young and old alike.  This would be a great way to have a fun Sunday {or SUNDAE!} afternoon with neighbors and get reacquainted.  So easy to have either in your garage, on your patio or even your front driveway.  Have guests come and make their own sundaes to enjoy on a hot summer day.  Serve in personalized party cups that really set the tone.  Make sure to include all the toppings like nuts, candies, cherries, whipped cream and sprinkles.

Fourth of July

Nothing screams SUMMER like the Fourth of July.  A time to celebrate our independence and enjoy time with family and friends.  You can plan a fun dinner and the entertainment is already set if you plan to watch the fireworks.  Plan a whole theme of red, white and blue from outfits to food to drinks.  You can also plan to see a local parade if your town is having one this year.

Boat Party

Whether you own a boat or rent a boat, invite friends aboard for a day of summer fun.  You can keep it casual with lighter fare and portable drinks while you enjoy a day on the water.  You can bring sandwiches from your favorite deli and a cooler for your drinks.  You can always find an island or marina to enjoy an offshore picnic or visit a restaurant as well.  Just don’t forget to pack sunscreen!  Use a personalized tote to keep all your boating gear in (which also comes in handy for farmers markets and pool/beach days!).

I hope you enjoy the summer weather and get an opportunity to see friends and family!

Kick Back and Relax with a Summer Cocktail

2 Jul

The long 4th of July weekend is finally here and I plan to kick back and relax. Are you doing any summer entertaining?

We have a family get-together planned this weekend and are looking forward to a few days away and doing not too much! But I did want to try a new summer cocktail. I’m not a big sweet drink person, but I love mint and since I’m growing it in my backyard, I’m going to clip a bunch of it and bring this great recipe with me so we can all try it!

june-mojitoThe Mojito Cocktail

This classic cocktail from Cuba is packed with fresh mint, lime juice, and rum and topped with club soda. Serve it in style in our Maestro Deluxe Highball Glassware.

Ingredients:

2 tablespoons white sugar
4 sprigs fresh mint
1 fluid ounce club soda
1 lime, halved
2 fluid ounces light rum
1 1/2 cups ice
2 fluid ounces club soda
1 sprig fresh mint

Directions:

Muddle sugar and mint with soda water in pint glass. Squeeze both halves of lime into the glass leaving one hull in the mixture. Add rum, stir, and fill with ice. Top with club soda.

Garnish with a mint sprig.

I find a lot of really delicious recipes and inspiration on AllRecipes.com and recommend you do too!

Happy 4th and be safe.

Best wishes,
Renee
